We're always looking for ways to elevate our camping recipes and outdoor cooking. We don't want to eat the same ol' boring food, and certainly try to avoid processed junk as possible.

Pintrest is full of camping recipes for hotdogs wrapped in crescent rolls, and dutch oven mac n cheese....but we want to eat gooood food when we're outside. I guess you could call us camping foodies of sorts.

Enter our awesome buddy, Anthony Hashem. Anthony started a food truck in Jacksonville, FL back in 2013 called The Happy Grilled Cheese. They create amazing concoctions, like the Apple Swiss Melt (Swiss, Mozzarella, Diced Apples and Grilled Onion) or the Freshy Fresh (Mozzarella, Avocado, Argula, Tomato, Pesto & Red Onion). I love how they also sell homemade tomato soup in a dip size for $1. So cool.

The Happy Grilled Cheese's growth has been explosive with exciting additions to the original food truck; they now run a brick and mortar restaurant in downtown JAX, and are opening another location in Mandarin this summer. But they're not stopping there: he's also opening a food truck in Austin, Texas in October. Suffice to say, this man knows grilled cheese, and knows gooooood food in general.

We asked Anthony for his recommendation on elevating our grilled peaches. His advice led us to create this Next Level Grilled Cheese.
