SIMPLE SKILLET
This is one of my go-to dishes. It's stupid simple, extremely versatile and incredibly delicious. Bonus- it can all be made in just one skillet. Less mess! The best kind of meal, amiright?
Oh, and it's low carb. Maybe even no carb? Either way, it's lean and I can feel good about eating it.

This skillet can be made with virtually anything in your fridge. My favorite variation includes:

Chicken (the expensive kind. You know what I'm talking about. Free-range. Organic. Blah blah)
Bacon (BACON!)
High-quality smoked kielbasa
Bell Peppers
Onion
Sweet potato
Green onions
Lots and lots of buffalo sauce
Directions
Chop up all veggies and the chicken. I like mine kinda chunky.
If using an oven, cook the bacon at about 400 degrees for around 20 mins. Or, just pan fry on the stove.
Put a dab of olive oil in your skillet. Heat it up real nice.
Toss those sweet potatoes in, and let those babies get brown and crispy.
In the same skillet, cook up the chicken.
Add in the other veggies. Onion. Peppers. (But save the green onion until the end)
Toss in the sausages. They're likely already cooked, so they don't need as much time. Just warm it up and crispy them up.
Stir a lot and season with whatever you like.
Crumple the bacon. Add that on it too.
Grab those veggies, toss them on in.
Mix it all up. Douse with buffalo sauce. Sprinkle on the green onion.
DONE! Eat up.

Variations
This dish is so versatile. Try adding in:
Shrimp
Zucchini
Brussel sprouts
Steak
Other sauces, like chipotle hot sauce, or balsamic.
Anything!
Easy Peezy
This is the perfect meal to make while camping, since it's so easy and uses only one skillet. We make it all the time at home too; we just fire up the grill out back and enjoy a simple meal outdoors in our own backyard. Hope y'all enjoy!
